Hallmark Care Homes appoints Head of Chef Academy

    image1Award-winning care provider, Hallmark Care Homes has appointed Brian Lane as Head of Chef Academy.

     

    Brian, who has over 42 years’ cookery experience working for luxury hotels, yachts and Michelin star restaurants, hopes to lift the profile of food in the care sector.

     

    He plans to do so by supporting 15 Hallmark Care Homes Head Chef’s with their menus, working alongside them in the kitchen and creating cookery workshops where the Chefs can gain further knowledge and improve their existing skills.

     

    Brian brings with him over 11 years healthcare experience working for Barchester, where he was Head of Chef Academy.

     

    He said: “I am looking forward to mentoring and motivating Hallmark Care Homes Chef’s to deliver outstanding, exciting and well-presented food for the residents.

     

    “My workshops will look at creating delicious sauces, pastries, baked goods, hot and cold desserts and meals suitable for those living with dementia.

     

    “I will also look to create a recipe bank for the Chefs and will work closely with the Hospitality teams to ensure the residents are having an enjoyable dining experience throughout mealtimes.”
